This simple, protein-packed breakfast staple has just been given a GLOW UP with MACADAMIAS! Perfect for people on the go, this make-ahead breakfast dream is versatile and tasty, allowing you to add any of your favorite toppings. I added macadamia nuts and my homemade mango jam, which is pure bliss and highly recommended!

This breakfast staple is one that I will make over and over again because it’s so easy to customize and is absolutely delicious. This chia pudding in particular features my homemade mango jam, macadamias and the perfect splash of tropical coconut bliss! These tropical, flavorful, and buttery smooth nuts were made for chia pudding, adding a rich, luxurious texture and taste that will make you feel like you’re on a dream vacation with every bite. 

Perfect for those busy mornings, this make-ahead breakfast is incredibly easy to prepare and versatile enough to keep you excited every day of the week. Whether you top it with fresh fruits, granola, or my homemade mango jam (highly recommended!), this pudding is anything but ordinary. Ingredients for Macadamia Chia Pudding

  • Macadamia Nut Butter: Adds a rich, buttery flavor and smooth texture to the pudding. Macadamia nuts are known for their creamy texture and high healthy fat content, making them perfect for a decadent breakfast. If you don’t have macadamia nut butter, almond butter or cashew butter can be used as substitutes.
  • Coconut Milk: Provides a creamy base with a hint of tropical flavor, enhancing the overall richness of the pudding. Coconut milk is also packed with healthy fats that keep you full longer. Other suitable options would be almond milk, oat milk or my homemade soy milk.
  • Coconut Water: Adds a refreshing and hydrating element to the pudding. It’s lighter than regular water and adds a subtle sweetness. If you don’t have coconut water, regular filtered water will be fine.
  • White Chia Seeds: These tiny seeds are a powerhouse of nutrition, providing omega-3 fatty acids, protein, and fiber. White chia seeds blend beautifully into the pudding, giving it a light and bright appearance. Black chia seeds can be used if you prefer, but they will give the pudding a darker color.
  • Maple Syrup: Adds natural sweetness to the pudding without refined sugar. You can adjust the amount based on your sweetness preference. Honey or agave syrup can be used as alternatives.
  • Vanilla Extract: Enhances the overall flavor of the pudding, adding a warm and comforting note. Pure vanilla extract is best, but you can use vanilla bean paste for a more intense flavor.
  • Mango Chia Jam: A tropical topping that adds a burst of flavor and extra nutrients. Homemade mango jam is ideal, but store-bought mango jam or fresh mango slices work well too.
  • Extra Macadamia Nuts, Granola, Nuts, or Seeds (optional): For added crunch and texture, sprinkle some extra macadamia nuts, granola, or your favorite seeds on top.

How to Make Macadamia Chia Pudding

To make Macadamia Chia Pudding, start by combining the macadamia nut butter, coconut milk, coconut water, chia seeds, maple syrup, and vanilla extract in a large bowl. Whisk until everything is thoroughly mixed. Let the mixture rest for 5 minutes, then whisk again to remove any lumps and ensure an even consistency. Cover the bowl and refrigerate for at least two hours, allowing the chia seeds to expand and thicken the pudding.

Once the pudding is set (can be left overnight but will set within 2 hours), remove it from the fridge and transfer a portion to a serving glass or jar. Top with your favourite toppings like mango chia jam, extra macadamia nuts, granola, or seeds for added flavor and texture.   • Sweetness: Adjust the sweetness to your liking by adding more or less maple syrup, or try different sweeteners like honey or agave.

Macadamia Chia Pudding

Equipment

  • fridge, serving jars, airtight container/bowl

Ingredients
  

  • 1 tbsp macadamia nut butter
  • 1 cup coconut milk
  • ½ cup coconut water
  • 4 tbsp white chia seeds
  • 1-2 tbsp maple syrup
  • ½ tsp vanilla extract
  • 1 scoop mango chia jam
  • extra macadmaia, granola, nuts or seeds optional for serving

Instructions
 

  • In a large bowl, combine the mandamia nut butter, coconut milk, chia seeds, maple syrup and vanilla. And whisk until thoroughly combined.
  • Allow to rest for 5 mins the whisk again to remove any additional lumps.
  • Cover and refrigerate for atleast two hours.
  • Remove from the fridge, and transfer a portion to a serving glass or jar and top with your favorite toppings.

Notes

** I used white chia seeds. They are so bright and beautiful. But you can absolutely use black chia too. The nutritional benefits are the same. Just be aware your pudding will be darker in color 
** I used my homemade mango jam to top my pudding. The tropical mango flavors are the best sweet addition! Grab the recipe HERE. You can always opt for fresh mango or toppings of choice
