I present to you my Crispy Cauliflower Steak with Herb Quinoa Bowl, a dish that’s not only delicious but also a feast for the senses. Brace yourself for a whirlwind of flavors, textures, and a hearty dose of satisfaction!

I can’t contain my excitement for this culinary creation! Picture this: crispy, crunchy cauliflower that practically explodes with flavor as you take your first bite. Paired with my favorite quinoa, sweet pops of peas and edamame, and a creamy, tangy dressing that ties it all together – this dish will put the biggest smile on your face. It’s so satisfying; you won’t believe it’s vegan!

What you will need for these Cauliflower Steak Bowls:

  • Cauliflower: The star of our show! Cauliflower steaks are a joy to prepare and create a delightful meaty texture when coated and pan-fried.
  • Quinoa: A versatile grain that’s full of iron and protein. It’s a superfood for a reason! Cooking it in vegetable stock infuses it with flavor.
  • KALE: trust meeee kale haters! I’ll bring you around with this one!! So much flavor without sacrificing health. Try kale this way before you make your final judgement!!
  • PEAS: sweet beautiful pops of fresh peas are sooo delicious in my dish! You could use corn if peas aren’t your jam! 
  • EDAMAME: packed full of plant protein these are a great addition kit only for their yummy nutty flavor but for an extra protein boost. To sustain you for longer! 
  • CORN FLOUR: the corn flour will create the crispiest crunch when frying! 
  • TURMERIC POWDER: anti inflammatory amazingness! Turmeric has a beautiful flavor and is packed with health benefits. It will aid digestion. And works against body inflammation! 

What you need for maybe one of the best dressings:

A dressing can make or break a dish, and this one is a winner!

  • Vegan Mayo: If you’re not vegan, feel free to use regular mayo, but there are some fantastic vegan mayo options out there that are creamy and delicious.
  • Lemon Juice: That tangy kick is bright and beautiful in this dressing, adding a great punch and bringing out all the other flavors.
  • Garlic: Adds depth and flavor to the dressing. If you’re not a fan, ginger could work well as a substitute.
  • Maple Syrup: Strikes a perfect natural sweet balance to offset the lemon. It’s versatile and an excellent choice of natural sweetener.
  • Pepper: Seasoning is essential, and pepper adds a delightful note to dressings.
  • Tahini: Creamy, thick, and delicious! Tahini is made from ground-up sesame seeds and adds a rich, nutty flavor that’s amazing in dressings, especially this one.
  • Cilantro (or Your Choice of Fresh Herb): Again, I adore cilantro, but you’re more than welcome to sub it for any fresh herb of your choice.

Crispy Cauliflower Steak with Herb Quinoa Bowl

My peeps!!!!! THIS!! Crispy crunchy cauli explosion in ya gob! Has been one of my biggest dinny triumphs! Paired with my favey quinoa, sweet pops of peas and edamame abd delicious creamy and tangy dressing. This delishy bowl of yum will make your lil heart smiley. So satisfying!

Ingredients
  

  • 1 cauliflower steak cut from the center
  • ½ cup quinoa
  • 1 cup vegetable stock
  • olive oil
  • kale
  • 1 clove of garlic minced
  • peas
  • edamame
  • avocado
  • fresh cilantro sub for basil or any fresh herb you love
  • avocado oil
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • 4 tbs corn flour
  • ¼ tsp salt
  • fresh pepper
  • ¼ tsp turmeric powder
  • ¼ tsp cummin
  • plant based milk

Dressing Ingredients

  • ¼ cup vegan mayo
  • squeeze of fresh lemon juice
  • 1 garlic clove minced
  • ½ tsp maple syrup
  • fresh pepper
  • 1 tbsp tahini
  • sprinkle of chopped cilantro

Instructions
 

  • Preheat your oven to 350
  • Cut your cauliflower In a bowl, mix your flour, garlic and onion powders, turmeric, salt pepper and cummin and whisk to combine.
  • In a separate bowl add a little plantbased milk. Dip your cauli in the milk then thoroughly sprinkle your flour mix on both sides.
  • In a hot pan, add your avocado oil and lay your cauli in the pan. Sear until browned and crispy and then turn. Sear until golden brown on both sides then pop it onto a tray and put in to oven until it it fork tender.
  • Cook your quinoa according to package instructions subbing the water for vegetable stock. Then add to a bowl with a drizzle of olive oil and chopped fresh cilantro. Set aside
  • For the kale. Sauté garlic and kale in a lil olive oil until wilted and the garlic fragrant, then set aside.
  • For the dressing simply add all your ingredients into a small bowl and whisk until combined.
  • Add your kale, peas, edamame, quinoa, and beautiful cauli steak to a bowl and top with half an AVO and that yummy creamy dressing!
