Sometimes you just want all the best parts of a cheeseburger without worrying about the bun. That’s exactly why this cheeseburger bowl has become one of my favorite easy dinners.


It has everything you’d expect from your favorite burger. There’s juicy seasoned ground beef, plenty of melted cheese, crisp lettuce, ripe tomatoes, creamy avocado, crunchy pickles, crispy tater tots, and the most delicious homemade burger sauce. Every bite is loaded with flavor, texture, and plenty of cheesy goodness.

Better yet, this recipe comes together in around 30 minutes, making it perfect for busy weeknights, meal prep, or whenever you’re craving comfort food.

Ingredients You’ll Need

You only need a handful of simple ingredients to recreate all the flavors of a classic cheeseburger—without the bun.

Ground Beef

I like using lean ground beef because it stays juicy while still browning beautifully. It creates the perfect hearty base for the bowl.

Gouda Cheese

Instead of simply sprinkling cheese over the top, I melt grated Gouda directly into the beef. It creates an incredibly rich, creamy texture that coats every bite.

Tater Tots

Crispy tater tots add that irresistible fast-food feel while soaking up all of the cheesy beef and burger sauce. You can easily swap them for fries if that’s what you have on hand.

How to Make a Cheeseburger Bowl

Step 1: Make the Burger Sauce

Add all of the burger sauce ingredients to a small bowl. Stir until smooth and well combined, then refrigerate while you prepare the remaining ingredients. This allows the flavors to develop while everything else cooks.

Step 2: Cook the Beef

Heat a large skillet over medium-high heat. Add the ground beef, salt, and BBQ seasoning. Cook, breaking the beef apart as it browns, until it is fully cooked and no longer pink.

Step 3: Add the Cheese

Reduce the heat to low and stir the grated Gouda through the beef. Continue stirring until the cheese has completely melted and coats the beef in a rich, cheesy sauce.

Step 4: Cook the Tater Tots

While the beef is cooking, air fry the tater tots or fries according to the package instructions until golden brown and crispy.

Step 5: Assemble

Divide the shredded lettuce between serving bowls. Add the crispy tater tots, tomatoes, red onion, avocado, pickles, and generous spoonfuls of the cheesy beef mixture.

  • 1 lb ground beef
  • 1 tsp salt
  • 2 tsp  BBQ seasoning
  • 1 1/2 cups grated Gouda cheese
  • Shredded lettuce
  • Baby tomatoes, halved
  • Red onion, thinly sliced
  • Avocado, sliced
  • Dill pickles
  • Tater tots or fries

Burger Sauce

  • 1/4 cup mayonnaise
  • 2 Tbsp  ketchup
  • 1 Tbsp yellow mustard
  • 1 Tbsp finely chopped dill pickles or relish
  • 1 tsp pickle juice
  • 1/2 tsp  garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp smoked paprika
  • Freshly ground black pepper, to taste

Instructions
 

  • Stir together all of the burger sauce ingredients until smooth and set aside.
  • Cook the ground beef in a large skillet with the salt and BBQ seasoning until browned.
  • Stir in the grated Gouda cheese until melted and creamy.
  • Air fry the tater tots or fries until crispy.
  • Fill serving bowls with shredded lettuce.
  • Add the tater tots, tomatoes, onion, avocado, pickles, and cheesy beef.
  • Drizzle generously with burger sauce.
  • Finish with extra grated cheese if desired and serve immediately.
