Vegan Pad See Ew (Hokkien)

Experience the magic of Pad See Ew Hokkien, a quick and delightful vegan noodle dish. Thin hokkien noodles wade in a sweet, salty, and savory sauce, mingling with fresh gai lan. This Thai-inspired fusion dish is a weeknight favorite in just minutes.

Have you ever stumbled upon culinary magic in your own kitchen? Well, that’s precisely what happened when I ventured into making Pad See Ew Hokkien.

Traditionally a Thai dish featuring thick flat rice noodles, I decided to give it my own twist by using thin hokkien noodles, and let me tell you—it turned out to be pure magic! One of the things I absolutely adore about Thai cuisine is the art of balancing sweet, salty, spicy, and sour flavors. As a big fan of Thai cooking, I couldn’t resist the temptation to recreate one of my all-time favorites, and of course, put a vegan spin on it.

What you will need for your own Vegan Pad See Ew

  • Hokkien Noodles: If you’re a noodle enthusiast like me, you’re in for a treat! Hokkien noodles are a personal favorite, and for this recipe, I’ve chosen the thin variety. However, feel free to experiment with rice noodles or the thicker hokkien noodles based on your preference.

  • Vegan Oyster Sauce: Prepare to be amazed by this condiment! Vegan oyster sauce is a flavor powerhouse, offering a burst of umami goodness. Unlike traditional oyster sauce, its rich flavor is derived from mushrooms, making it a true flavor bomb. Start with a little and adjust to taste, as it’s quite potent.

  • Gai Lan (Asian Greens): When it comes to stir-fries, Gai Lan is a star performer. This Asian green is a perfect companion for noodles, adding a delightful crunch to the dish. The best part? You won’t feel like you’re missing out on anything.

Oodles of noodles in a sweet and savory umami sauce, dancing alongside fresh and crunchy gai lan. It’s a simple yet divine combination that comes together in just minutes. Pad See Ew Hokkien is destined to become your go-to weeknight meal! Try it tonight and love it for life.
