Pad See Ew (Hokkien)

Sometimes we accidentally create absolute deliciousness!! And let me tell you, that is the best part of food!!! One of my all time favorite dishes is a Thai dish called pad see ew. It’s traditionally made with thick flat rice noodles. This recipe I opted for thin hokkien noodles and it is pure magic! The best thing about Thai cooking is the perfect balance of sweet, salty, spicy and sour. I am such a huge fan of Thai cooking, and so I just had to have a go at making one of my favorite dishes and of course veganizing it! Oodles of noodles, swimming in a sweet and salty umami sticky sauce with fresh crunchy gai lan. So simple. Ready in just minutes and is sure to be one of your new go to weeknight meals!

Ingredients
  

Ingredients

  • 14 oz hokkien noodles
  • 4 bunches of gai lan
  • 3 cloves garlic chopped
  • 1 tbsp ginger finely chopped

The Sauce Ingredients

  • 2 tbsp soy sauce
  • 4 tbsp vegan oyster sauce
  • 2 tbsp brown sugar
  • 2 tbsp dark soy sauce

Instructions
 

  • Simply combine sauce ingredients and set aside.
  • Heat a pan with a Lil peanut oil and add ginger, garlic and gai lan. Sautée over a high heat till the ginger and garlic are fragrant and the gai lan is wilted but still has a crunch.
  • Add the noodles and sauce and stir fry until combined and the sauce becomes slightly sticky. Remove from heat, chuck in a bowl, grab ya chopsticks and slurp that noodle Frankenstein up. So quick. Soooo easy. And bloody delicious
