How to Make Streusel Muffins

Starting with the streusel, the journey to delicious Citrus Streusel Muffins begins by blending vegan butter, flour, and sugar in a small bowl. The goal here is to achieve a breadcrumb-like consistency, which will later add a delightful crunch atop our muffins. Once mixed, set this bowl aside as we prepare for the next step.


Preheat it to a cozy 375°F, creating the perfect warm environment for our muffins to rise and shine. Meanwhile, prepare your muffin tin by lining it with muffin cups or giving it a light greasing with oil. In this pause, we also create our flax eggs by mixing ground flax with water, allowing it to sit and thicken for about 5 minutes, setting the foundation for our vegan muffins.

Now, the magic really begins as we mix our wet ingredients in a large bowl. A whisk brings together the vibrant citrus zest, coconut oil, and sugar. Into this, we stir in our flax eggs, citrus juice, and almond milk, creating a harmonious wet mixture. Then, we gently incorporate our dry ingredients: baking soda, baking powder, and a pinch of salt, followed by folding in the flour to form a slightly lumpy batter. This mixture is then lovingly spooned into the muffin cups, each crowned with our prepared streusel. After baking to golden perfection for 20-23 minutes and cooling just a tad, these muffins are ready to be enjoyed, ideally warm, with a smear of vegan butter for an extra touch of indulgence.

Streusel is a crumbly topping made from flour, butter, and sugar, often used in baking to add texture and sweetness to pastries like muffins and pies. Its crunchy texture contrasts beautifully with the soft muffin, creating a delightful textural experience.

How Long Do These Muffins Last?

Stored properly in an airtight container, these Citrus Streusel Muffins can last at room temperature for up to 2 days or in the refrigerator for up to a week. For longer preservation, freeze them and enjoy within three months, reheating briefly for that just-baked warmth and flavor.

Vegan Citrus Struesel Muffins

Equipment

Ingredients
  

Streusel Ingredients

  • 2 tbsp vegan butter
  • 3 tbsp all purpose flour
  • 2 tbsp sugar

Muffin Ingredients

  • 2-3 tbsp sumo citrus zest or orange
  • ½ cup sumo citrus juice or orange
  • 2 flax eggs 6 tbs water mixed with 2 tbsp ground flax
  • ½ cup coconut oil
  • ¼ cup almond milk
  • ¾ cup maple syrup
  • 2 cups all purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • pinch of salt

Instructions
 

  • Start by making the streusel. Add all ingredients into a small bowl and massage together with your fingertips until a texture of breadcrumbs is reached. And set aside.
  • Next pre heat the oven to 375 degrees F. And line a muffin tin with muffin cups. Or grease with avocado oil.
  • Now on to the muffins! First make the flax eggs in a small bowl. Simply whisk together 2 tbs ground flax with 6 tbs of water and allow to rest for 5 mins.
  • While the flax eggs are setting. I’m a large bowl whisk together the sumo citrus zest, coconut oil and sugar. Then add the flax egg, sumo citrus juice and almond milk.
  • Next whisk in the baking soda, baking powder and the pinch of salt.
  • Then fold in the flour. The batter will be loose and slightly lumpy.
  • Spoon batter into the muffin cups. Be sure to fill them amply. It will fill 11-12.
  • Sprinkle with the streusel mixture and bake for 20-23 mins. Or until when inserting a tooth lock it comes out clean. Keep an eye on them as they do cook fast!
  • Once baked. Remove from the tin carfully and transfer to a rack.
  • I love these muffins warm with a little extra vegan butter! Store any leftovers in the freezer to maintain fresh ness! Enjoy!!!
