  • CACAO NIBS: this right here you guys! CACAO NIBS! If you haven’t tried these amazing crunchy morsels that are actually crushed up dried  cacao beans you are missing out! It’s like all the fun of chocolate without any of the bad stuff! Haha the amazing crunchy texture is a gamecher here, giving you that amazing chocolate flavor we know and love with choc chip ice cream but an added 
  • HEALTH BOOST: I snack on these all the time too. They contain so many antioxidants that can help reduce cell damage in the body and the amounts of fiber in cacao nibs aids with digestion! So when you need that choc fix. Reach for the cacao nibs! 
  • AVOCADO: this dreamy fruit is not just for savory dishes! The creamy texture is so perfect when used in sweet dishes. I use them in smoothies all the time for this very reason. There’s very little flavor and all the textural and health benefits. Plus it helps add that beautiful muted green color! 
  • COCONUT MILK: here’s where we get CREAMY! Coconut milk is such a lovely base for non dairy ice creams. Rich and thick it gives the most amazing texture. This recipe is made with full fat coconut milk. For an even thicker consistency you could use coconut cream 🙂 
    PEPPERMINT: Extract the nostalgia!! I grew up lovingggg mint choc chip ice cream. That unmistakable wack ya in ya taste buds peppermint flavor will forever be in my heart. So it was so fun to recreate a plant based version! You can adjust the amount of peppermint extract to your taste

Mint Chocolate Chip Nice Cream

Cos who doesn’t want ice cream for breakfast !?!? This beautiful mint chocolate chip dairy free ice cream can be enjoyed anytime of the day! I’ve added granola coconut and macadamia nuts to mine for a breakfast treat, but it is of course AMAZING all on its own too! Smooth creamy dairy free mint choc ice cream topped with crunchy nuts and granola. This is brekky heaven my friends and everyone’s invited!! Let’s put on those happy pants and get our healthier ice cream on!!!!

Equipment

  • blender

Ingredients
  

  • 1 can coconut milk full fat
  • 2 tbsp maple syrup
  • 1 banana frozen
  • a few spinach leaves for color
  • ½ tsp peppermint extract
  • ½ cup cacao nibs I used BARE ORGANICS
  • 1 cup avocado chunks frozen

Instructions
 

  • Simply blend all ingredients besides the cacao nibs in your blender until silky smooth.
  • Then stir in your cacao nibs, spoon into your bowl, I used my beautiful coconut bowl. And top with macadamia nuts, granola and coconut. Summer brekky bliss! Or just a cheeky snack ENJOY!
