Mint Chocolate Chip Nice Cream

Cos who doesn’t want ice cream for breakfast !?!? This beautiful mint chocolate chip dairy free ice cream can be enjoyed anytime of the day! I’ve added granola coconut and macadamia nuts to mine for a breakfast treat, but it is of course AMAZING all on its own too! Smooth creamy dairy free mint choc ice cream topped with crunchy nuts and granola. This is brekky heaven my friends and everyone’s invited!! Let’s put on those happy pants and get our healthier ice cream on!!!!

Ingredients
  

  • 1 can coconut milk full fat
  • 2 tbsp maple syrup
  • 1 banana frozen
  • a few spinach leaves for color
  • ½ tsp peppermint extract
  • ½ cup cacao nibs I used BARE ORGANICS
  • 1 cup avocado chunks frozen

Instructions
 

  • Simply blend all ingredients besides the cacao nibs in your blender until silky smooth.
  • Then stir in your cacao nibs, spoon into your bowl, I used my beautiful coconut bowl. And top with macadamia nuts, granola and coconut. Summer brekky bliss! Or just a cheeky snack ENJOY!
