What you will need:

SPAGHETTI: Feel free to use gluten free spaghetti or even any type of pasta you love! I chose spaghetti as it holds the herby pesto so beautifully! 

AVOCADO: adding creamy avocado on this pasta really takes it to the next level. Adding healthy fats it’s a beautiful cooling contrast! 

PUMPKIN SEEDS: pumpkin seeds add the most beautiful crunchy texture and also add some amazing plant protein, iron and more healthy fats! They are truly such a wonderful healthy snack and topper to pastas and salads! You could always sub for almonds or sunflowers seeds! Anything with a lovely crunch. 

HEMP SEEDS: I used hemp seeds both in the pesto and as a garnish. These amazing seeds and chock full of plant protein and a great addition to this dish. Boosting its nutritional value! 

KALE: for all the non kale lovers out there… THIS IS HOW YOU CAN KALE and love it! Bursting with vitamins and antioxidants, kale is so abundantly good for us. If you aren’t a fan of the ‘rough’ texture this pesto is a great way to get those leafy greens in! 

PARSLEY: so fresh and vibrant. I love the flavor of parsley. If you aren’t a parsley fan you can always sub for your favorite fresh herb. 

OLIVE OIL: healthy, natural and such an amazing pesto base. A good quality olive oil I believe is such an essential part of a healthy diet. 

SALT: seasoning is key in a dish so simple. Add the recipe amount and adjust to taste. I used pink sea salt in this recipe. 

GARLIC: coming in with a flavor POW! The garlic in pesto is what really makes it sing! Using it raw means as it hits the hot pasta it releases all its beautiful flavors and aromas. Plus. Garlic is so amazing at boosting immunity and a great addition to your daily diet! 

LEMON: The zing of fresh lemon takes all the other flavors to the next level. It brightens up the whole dish. 

RAW ALMONDS: this build adds an amazing texture in the pesto. Making it hearty and thick. 

DAIRY FREE CREAM CHEESE: here’s the creamy dreamy element coming in hot! The vegan cream cheeses now are so good! Adding the cream cheese makes this pasta come alive. Adding to the texture brings in some much needed richness! 

This kale pesto is both vegan and 100% delicious

Kale Pesto and Hemp Spaghetti

Holyyyy plant based protein yumgasms Batman!! I did the biggest internal happy dance once I took a slurpalicious fork full of this pasta yays! With hemp and pumpkin seeds for an added burst of plant protein and the beautiful bold flavor packed pesto my fork did a lil happy twirl and my tummy thanked me. For the love of your taste buds get this simple bowl of yum in ya tum!

Equipment

  • blender

Ingredients
  

Spaghetti Ingredients

  • ½ lb spaghetti
  • avocado
  • pumpkin seeds garnish
  • hemp seeds garnish

Pesto Ingredients

  • 1 large bunch of kale stems removed
  • 1 cup parsley chopped
  • ½ cup olive oil
  • ¼ tsp salt more to taste
  • 1 garlic clove
  • juice of one lemon
  • ¼ - ½ cup raw almonds
  • 1 tbsp dairy free cream cheese
  • 2 tbsp hemp seeds

Instructions
 

  • FIRST let’s whip up that pesto. Blanch your kale in boiling salted water for 5 mins then transfer to a blender with all other pesto ingredients. Pulse until we’ll combine and set aside.
  • COOK spaghetti according to package directions.
  • Add your pasta and pesto to a bowl and toss thoroughly.
  • Serve with beautiful creamy avocado and a sprinkle of hemp seeds if desired. ENJOYYYY
