Kale Pesto and Hemp Spaghetti

Holyyyy plant based protein yumgasms Batman!! I did the biggest internal happy dance once I took a slurpalicious fork full of this pasta yays! With hemp and pumpkin seeds for an added burst of plant protein and the beautiful bold flavor packed pesto my fork did a lil happy twirl and my tummy thanked me. For the love of your taste buds get this simple bowl of yum in ya tum!

Ingredients
  

Spaghetti Ingredients

  • ½ lb spaghetti
  • avocado
  • pumpkin seeds garnish
  • hemp seeds garnish

Pesto Ingredients

  • 1 large bunch of kale stems removed
  • 1 cup parsley chopped
  • ½ cup olive oil
  • ¼ tsp salt more to taste
  • 1 garlic clove
  • juice of one lemon
  • ¼ - ½ cup raw almonds
  • 1 tbsp dairy free cream cheese
  • 2 tbsp hemp seeds

Instructions
 

  • FIRST let’s whip up that pesto. Blanch your kale in boiling salted water for 5 mins then transfer to a blender with all other pesto ingredients. Pulse until we’ll combine and set aside.
  • COOK spaghetti according to package directions.
  • Add your pasta and pesto to a bowl and toss thoroughly.
  • Serve with beautiful creamy avocado and a sprinkle of hemp seeds if desired. ENJOYYYY
