Spicy Avocado Kiwi Salad

This quick and easy greens salad is packed with nutritious ingredients and topped with a delicious lemon garlic vinaigrette. The whole thing comes together in under 30 minutes and can easily be meal prepped or made larger to serve as a side.

Sometimes recipes just come together and are complete magic. Craving greens, I came up with this on a whim, and boyyyy is it a winner! This Spicy Avocado Kiwi Salad is the perfect green salad to celebrate St. Patrick’s Day or any day you want to enjoy a fresh, vibrant meal. Creamy avocado, zingy kiwi, and spicy serrano chili with all the greens, topped with my zesty lemon and garlic vinaigrette—BAM! Let’s get it!

Spicy Avocado Kiwi Salad Ingredients

  • Baby Gem Lettuce: The tender and crunchy base of the salad, provides a fresh and crisp texture.
  • Avocado: Sliced for creamy richness, packed with healthy fats and fiber.
  • Green Bell Pepper: Adds a sweet crunch and is rich in vitamins A and C.
  • Kiwi: Sliced and quartered for a zingy, tart flavor, full of vitamin C and antioxidants.
  • Green Peas: Thawed and sprinkled for a sweet and tender bite, adding protein and fiber.
  • Serrano Chili: Sliced and seeds removed for a spicy kick that elevates the salad’s flavor profile.

Lemon Garlic Vinaigrette

  • Fresh Lemon Juice: Fresh lemon juice adds a bright, zesty flavor that enhances the overall taste of the vinaigrette and provides a boost of vitamin C.
  • Coconut Oil: Coconut oil adds a smooth, creamy texture and a subtle tropical flavor, while also contributing healthy fats. Olive oil will also work instead of coconut oil.
  • Minced Garlic: Minced garlic gives the vinaigrette a pungent, savory depth of flavor and offers antibacterial and anti-inflammatory properties. If you prefer a more mild flavor for the garlic go with powdered.
  • Salt and Pepper: Salt and pepper balance the flavors of the vinaigrette, enhancing each ingredient’s taste and adding a final touch of seasoning.

How to Make Spicy Avocado Salad

Start by preparing all the salad ingredients: wash and chop the baby gem lettuce, slice the avocado and green bell pepper, slice and quarter the kiwi, thaw the green peas, and slice the serrano chili, removing the seeds. Arrange the prepared ingredients on a plate or in a bowl, creating a beautiful, vibrant display.

Next, make the lemon garlic vinaigrette by adding 1/4 cup of fresh lemon juice, 2 tablespoons of coconut oil, 1 tablespoon of minced garlic, and salt and pepper to taste in a bowl. Whisk thoroughly until well combined. Drizzle as much or as little of the vinaigrette over the salad as you like. Then enjoy! This salad really is that quick and easy.

Ingredients
  

Salad Ingredients

  • 1 head baby gem lettuce
  • 1 avocado sliced
  • ½ green bell pepper sliced
  • 1 kiwi sliced, quartered
  • ¼ cup green peas thawed
  • ½ serrano chilli sliced, seeds removed

Lemon Garlic Vinaigrette

  • ¼ cup fresh lemon juice
  • 2 tbsp coconut oil
  • 1 tbsp minced garlic
  • salt and pepper to taste

Instructions
 

  • Simply prepare all salad ingredients and assemble on a plate or in a bowl
  • To make the dressing just add all dressing ingredients into a bowl and whisk thoroughly
  • Drizzle as much or as little of your dressing over the salad and enjoy!
