Salad Ingredients

  • 1 packet hearts of palm angel hair pasta or gluten free pasta of choice
  • 2 cups kale
  • 1 cup orange bell pepper sliced
  • 1-1½ cups baby orange tomatoes
  • 1 cup pomegranate seeds
  • 1 cup purple cabbage
  • 1 cup celery chopped

Cilantro Yogurt Dressing Ingredients

  • ½ cup plain vegan yogurt
  • ¼ cup extra virgin olive oil
  • tbsp lemon juice
  • 1 tsp garlic minced
  • tsp maple syrup
  • ¼ tsp black pepper
  • ½ tsp salt
  • ½ cup cilantro chopped

Instructions
 

  • Rinse and drain hearts of palm pasta
  • Chop all vegetables
  • Add all dressing ingredients into a bowl and whisk well to combine. Set aside
  • Add all salad ingredients into a bowl
  • Drizzle with dressing

Leftover dressing can be stored in an airtight container in the fridge
