Delight in the Crunchy Asian Edamame Papaya Slaw by Claire Bear Bites. It's a sweet and savory sensation, packed with vibrant veggies and an irresistible dressing!

Welcome to the world of my “Crunchy Asian Edamame Papaya Slaw.” Hold onto your hats because we’re about to embark on a flavor-packed journey that’s crunchy, zesty, and oh-so-delicious!

A Burst of Flavor and Texture

Now, I have to admit, I’m a big fan of sweet and savory combinations. And this slaw is the epitome of that delightful pairing! It’s got all the crunch you crave, a burst of zesty Asian-inspired flavors, and a clean, fresh finish. If you’re not a fan of papaya, no worries—feel free to sub it with mango. Let’s dive in and get “slawy” with it!

What you will need:

  • PAPAYA: papaya usually has most people divided! Haha people either love it or hate it! I’m a lover! If it’s not your jam you can swap for mango! 
  • PURPLE CABBAGE: crunchy bright and soooo vibrant and beautiful. It’s a slaw staple for a reason. So delicious! If you can’t find purple cabbage. Regular cabbage works great too! 
  • EDAMAME: packed fullll of protein. This young soybean is not only a staple in Asian cusine it’s a powerhouse if you’re living a plantbased lifestyle. Delicious, sweet and nutty. It’s perfect in this slaw! 
  • ZUCHINNI: the ultimate flavor sponge!!! It sucks up all the delicious marinade and becomes so tender! 
  • SUNFLOWER SEEDS: for the perfect textural CRUNCH! Full of healthy fats too. Feel free to sub for cashews, peanuts, or even pumpkin seeds! 
  • LIME: floral and tangy. The fresh lime is the perfect balance. 
  • RICE VINAGAR: essential in balancing out the Asian flavors 
  • MAPLE SYRUP: adding a sweetness to counteract the spicy and salty! 
  • VEGAN FISH SAUCE: feel free to sub for regular fish sauce, soy sauce or tamari. Vegan fish sauce is made from mushrooms and has the ultimate umami flavor!  
  • BIRDSEYE CHILI: for spice lovers this is the bang!! Feel free to omit if spice isn’t your jam! Or use a milder chili. 

Prepare the Dressing

As mentioned earlier, combine all the dressing ingredients in a bowl. Whisk them together until they meld into a flavor symphony. Set this heavenly dressing aside; we’ll come back to it shortly.

Chop and Slice the Veggies

Now, let’s prep those vibrant veggies. Julienne the papaya (or mango if you prefer), slice the purple cabbage thinly, and julienne the zucchinis. These colorful ingredients are about to bring your slaw to life!

Crunchy Asian Edamame Papaya Slaw

Holy texture and taste gasms Batman!!!! My lil slaw baby is smack ya butt GOOOOD!! If you follow me you knowwwww I’m a huge sweet/savory addict. This crunchy, zesty, Asian inspired fresh n clean lil zinger hits it all. I know not everyone likes papaya so feel free to sub for mango. LETS GET SLAWY WID IT!!

Ingredients
  

  • ½ papaya julienned (sliced into thin strips)
  • 2 cups purple cabbage sliced thinly
  • 1 cup edamame
  • 2 zucchini’s julienned
  • ¼ sunflower seeds
  • fresh lime

Salad Dressing Ingredients

  • cup rice vinegar
  • 3 tbs maple syrup or sugar
  • 1 tbs vegan fish sauce **sub for soy sauce or tamari
  • 1 tsp salt
  • 2 cloves of garlic minced
  • 1 bird’s eye chili chopped finely, seeds removed (optional)

Instructions
 

  • Combine all dressing ingredients into a bowl and whisk until thoroughly combined and set aside.
  • Prepare all your veggies and add to a large bowl. Coat in the dressing, toss and add to your plates. Sprinkle with the sunflower seeds and fresh lime! This is a great side to any asain inspired meal, with tortilla chips, in tacos or just a healthy lil snacky snack!!! Obsessed! Hope you try!!
