This simple yet absolutely delicious side/snack/fresh summer lunch will become a must-save recipe on your weekly meal list. What you will need to make my Crunchy Asian Palmini Carrot Salad:

  • CARROTS: carrots are such a go to for me. And the most amazing, crunchy sweet base for my salad. Pairs so beautiful with Asian flavors and of course it’s packed with vitamin A and essential vitamins and minerals
  • HEARTS OF PALM NOODLES: feel free to sub for vermicelli or any noodle of choice. I chose heart of palm noodles and they make this dish so light and a great option for anyone wanting to reduce the amounts of carbs. 
  • CORN KERNELS: the most amazing sweet POP! I just adore the addition of corn in here. A sweet lil surprise in every bite. 
  • CASHEW HALVES: you can absolutely sub for peanuts or even almonds. Seeds like pumpkin or sunflower could also be a great addition. They are the perfect textural crunch. 
  • RICE VINEGAR: a staple in Asian cuisine and an essential part of the delicate balance of this dressing 
  • MAPLE SYRUP: I loveee using maple syrup as a sweetener, it’s a great natural sugar choice. 
  • SESAME OIL: that unmistakable nutty delicious flavor! I adore sesame oil. It packs a huge flavor punch and is an amazing Asian flavor that had to be included.

Prepare the Dressing

In a jar, combine the extra virgin olive oil, seasoned rice vinegar, maple syrup, sesame oil, reduced sodium soy sauce, pinch of salt, minced garlic, and fresh ginger. Close the jar tightly and shake well to mix all the ingredients thoroughly. Set the dressing aside. This dressing can be refrigerated for up to 2 weeks, so feel free to make extra for future use.

Prepare the Salad

Rinse and drain the hearts of palm angel hair pasta (if using). Use a spiralizer to create thin noodle-like strands from the carrots. If you don’t have a spiralizer, you can use a vegetable peeler to make thin ribbons or cut the carrots into matchsticks.

Assemble the Salad

In a large mixing bowl, combine the spiralized carrots, hearts of palm angel hair pasta (or rice noodles), corn kernels, and cashew halves.

Dress the Salad

Drizzle the desired amount of the prepared Asian Sesame Dressing over the salad ingredients. You can add as much or as little dressing as you like, depending on your taste preference.

Toss and Serve

Gently toss all the salad ingredients with the dressing, ensuring everything is well coated. The dressing will infuse the salad with its delicious flavors. Once everything is mixed, the salad is ready to serve.

CRUNCHY ASIAN PALMINI CARROT SALAD

Crunchy sweet carrots with the most amazingly flavorful Asian sesame dressing. Healthy nutritious and delicious. Obsession is an understatement! you will fall in love a million times over with this vibrant, and tasty salad.

Equipment

  • spiralizer

Ingredients
  

  • 2 carrots spiralized
  • 1 packet hearts of palm angel hair pasta feel free to sub for rice noodles
  • ½ cup corn kernels
  • ¼ cup cashew halves

ASIAN SESAME DRESSING

  • ¼ cup extra virgin olive oil
  • ¼ cup seasoned rice vinegar
  • tsp maple syrup
  • 3 tsp sesame oil m
  • 1-2 tsp reduced sodium soy sauce
  • pinch of salt
  • 1 clove garlic minced
  • ½ tsp fresh ginger minced

Instructions
 

  • To make the dressing. Add all ingredients into a jar and shake well. Set aside. (This dressing can be refrigerated for 2 weeks)
  • Prep carrots, rinse and drain your palmini hearts of palm angel hair.
  • Add all salad ingredients into a bowl, drizzle as much or as little dressing to taste. Then dive in!!
