Christmas Wreath Rice Salad

Bright, sweet, zingy and beyond crave worthy! OBSESSED would be an understatement. These simple flavors are a match made in heaven you guys! Make this Christmas Wreath Rice Salad during the holidays and wow everyone at the dinner table! It's cute, creative and oh so very delicious

Ingredients
  

  • 3, 7.6 oz containers healthy coconut brown rice or 5 cups cooked rice of choice
  • 1 tbsp olive oil
  • 1 tsp salt
  • zest of one lemon
  • juice of one lemon
  • cups peas
  • zucchini grated
  • 1 small bunch parsley chopped finely
  • ¾ cup slivered almonds
  • fresh basil leaves for garnish
  • baby cherry tomatoes for garnish

Instructions
 

  • First prepare the rice. If using pre portioned rice packs, cook according to package instructions or simply cook 2 1/2 cups of rice (5 cups cooked)
  • As the rice is warming/cooking let’s prepare all our veggies and set aside.
  • Once the rice is cooked. Add to a large bowl along with all the other ingredients except our cherry tomatoes and basil garnish.
  • Mix very well to ensure everything is combined thoroughly.
  • On a large serving plate, spoon the rice mixture around the sides to create a wreath shape.
  • Once we have our beautiful rice wreath it’s time for the fun part! Simply put three cherry tomatoes along with two basil leaves to mimic holly all around your wreath. And here it is! The most fun holiday side you can eat!! Enjoy!
