Made with sweet ripe apricots, fresh mint, zesty lime, white rum, and a splash of bubbly club soda, this refreshing cocktail is sunshine in a glass. It’s fruity, vibrant, and perfect for sipping on a warm afternoon.
This recipe is especially close to my heart because the apricots didn’t come from the grocery store, they came straight from a friend’s backyard tree. There’s something magical about picking fruit at the peak of apricot season and turning it into something delicious. The apricots were perfectly ripe, juicy, and practically begging to be muddled into a cocktail.
This isn’t the first time I’ve put those juicy summer apricots to good use. I also turned them into a refreshing APRICOT LEMONADE that’s become one of my favorite warm-weather drinks. This time, though, I wanted something a little more grown-up, and this apricot mojito was the perfect answer.
If you’ve never made a mojito with fresh fruit before, you’re in for a treat. The apricots add natural sweetness and a gorgeous golden color while still allowing the classic mint and lime flavors to shine through.
An apricot mojito is a fresh fruit variation of the classic Cuban cocktail. Traditional mojitos combine rum, mint, lime juice, sugar, and soda water. This version adds ripe apricots for a naturally sweet and juicy twist.
