Ingredients you’ll need to make these delicious banana oat chocolate chip bars

Dry ingredients:

  • 1 ½ cups gluten-free oats
  • 1 cup almond flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup dark chocolate chips

Wet ingredients:

  • 3 small or 2 medium ripe bananas, mashed
  • 1 tsp vanilla extract
  • ½ cup sun butter (or nut butter of choice)
  • ½ cup maple syrup
  • ½ cup oat milk
  • ¼ cup melted coconut oil (Carrington Farms organic coconut oil works beautifully)

Flax egg:

  • 1 tbsp milled flaxseed (Carrington Farms organic milled flaxseed)
  • 2 ½ tbsp warm water

How to make chocolate chip banana oat bars

1. Make your flax egg

In a small bowl, mix the milled flaxseed with warm water. Stir well and let it sit for about 5 minutes. It will thicken into a gel-like consistency—this is your plant-based binder magic.

2. Preheat the oven

Preheat your oven to 350°F (175°C) and line an 8×8 baking pan with parchment paper. This makes slicing (and clean-up) so much easier later.

3. Mix the wet ingredients

In a large mixing bowl, combine:

mashed bananas, vanilla extract, sun butter, maple syrup, oat milk, melted coconut oil, and your prepared flax egg.

Mix until smooth and creamy.

4. Add the dry ingredients

Add in the oats, almond flour, baking powder, salt, and chocolate chips.

Stir until everything is fully combined and you’ve got a thick, slightly sticky batter. (This is your “trust the process” moment.)

5. Bake

Spoon the mixture into your lined baking pan and spread it evenly.

Bake for about 30 minutes, or until the top is golden and a skewer or fork comes out mostly clean (a few melted chocolate streaks are totally fine and highly encouraged).

6. Cool & slice

Let the bars cool slightly before slicing into squares. This part is important, if you cut too early, they’ll be too soft (delicious, but messy).

Then slice, serve, and try not to eat half the tray immediately.

Store leftovers in an airtight container in the fridge for up to 5 days. They also freeze really well, just pop them in the microwave for a few seconds when you want that soft, gooey texture again.

  • No sun butter? Almond butter or peanut butter both work perfectly

Ingredients
  

Dry Ingredients

  • 1 1/2 cups Gluten free oats
  • 1 cup Almond flour
  • 1 tsp Baking powder
  • 1/2 tsp Salt

Wet Ingredients

  • 3 small Bananas, mashed
  • 1 tsp Vanilla extract
  • 1/2 cup Sun butter or nut butter of choice
  • 1/2 cup Oat milk
  • 1/4 cup Coconut oil, melted
  • 1 Flax egg 1 Tbsp ground flax mixed with 2 1/2 Tbsp warm water

Extras

  • Dark chocolate chips
  • Walnuts optional

Instructions
 

  • Start by making the flax egg. Simply mix 1 Tbsp of organic milled flaxseed with 2 1/2 Tbsp of warm water. Mix well and allow to stand for 5 minutes until it’s thickened. 
  • Next pre heat your oven to 350° F.
  • Then, in a large bowl, mix all of the wet ingredients together and then to that add all of the dry ingredients and mix well.
  • into the pan and bake it at 350° for 30 minutes or until a skewer or a fork comes out mostly clean.
  • Allowed to cool slightly, and then slice into squares. Enjoy immediately and store the leftovers in an air container in the fridge.
