If summer could be poured into a glass, it would look a lot like this Apricot Mojito Recipe.

This recipe is especially close to my heart because the apricots didn’t come from the grocery store, they came straight from a friend’s backyard tree. There’s something magical about picking fruit at the peak of apricot season and turning it into something delicious. The apricots were perfectly ripe, juicy, and practically begging to be muddled into a cocktail.

This isn’t the first time I’ve put those juicy summer apricots to good use. I also turned them into a refreshing APRICOT LEMONADE  that’s become one of my favorite warm-weather drinks. This time, though, I wanted something a little more grown-up, and this apricot mojito was the perfect answer.

Ingredients
  

  • 2 Apricots, pitted, halved
  • 10 Mint leaves + extra for garnish
  • 1 oz Simple syrup
  • 2 oz White rum
  • 1 oz Fresh lime juice
  • Club soda
  • Ice

Instructions
 

  • Simply muddle the Apricots, with the mint leaves in a cocktail shaker.
  • Next, add the rum, simple syrup and lime juice, along with some ice, then shake vigorously.
  • Then, to a chilled serving glass, add some ice and extra mint leaves, followed by the apricot mojito mixture.
  • Finally, top with some ice cold club soda and extra mint for garnish. ENJOY!
