It’s more than just the fact that it’s my favourite meal of the day, it’s also about the fact that it’s the most important! That’s why I’m bringing you all the options anytime I can! Today’s option? A healthy, vibrant Blue Chia Pudding Parfait! This eye-catching treat is not only a delight to look at but also packed with superfoods, making it an ideal way to kickstart your day with positivity and energy.

All the Necessary Ingredients for This Blue Chia Pudding Parfait

  • Chia Seeds: These tiny seeds are a powerhouse of omega-3 fatty acids, fibre, and protein.
  • Vegan Greek-Style Yogurt: Adds a creamy texture and is a great source of plant-based protein.
  • Maple Syrup: Provides natural sweetness without refined sugars.
  • Blue Spirulina Powder: A superfood algae that gives a vibrant colour and is rich in antioxidants.

There are so many ways to enjoy breakfast like breakfast parfait, chia pudding, overnight oats.. the list goes on!

What Makes a Breakfast Parfait the Best Option

Now, why a breakfast parfait? Parfaits are versatile, easy to make, and perfect for those on-the-go mornings. They’re a fantastic way to layer your favourite ingredients like yogurt, granola, and fruits. Plus, they’re easily customizable to fit any dietary preferences or restrictions. You can also really easily meal prep parfaits just like you would with overnight oats. The fact that chia pudding takes a little bit of time to materialize makes it that much better for meal prepping – you basically get to make it, forget about it and then be surprised by it in the morning.

What is a Parfait?

Imagine layers upon layers of yumminess, all nestled in a cute jar or glass, just waiting for you to dive in with a spoon. A parfait is like a little party in a cup, where every layer is an invitation to explore different textures and flavors. I know the word might sound a bit fancy but I assure you they are easy as pie to make!

One of my favorite superfoods to include in breakfast dishes is spirulina, especially the blue variety. This vibrant superfood is not only visually stunning but packed with health benefits. It’s a powerhouse of nutrients, including proteins, vitamins, and antioxidants. Blue spirulina adds a delightful twist to any dish, making it not only nutritious but also fun and Instagram-worthy!

Blue Chia Pudding Parfait

BREAKFAST! The most important meal of the day! So let’s have some fun! Bright and colorful and utterly delicious! Who doesn’t want pudding for breakfast! All natural and packed with superfoods like chia and blue spirulina. Creating this amazing parfait takes only minutes to mix and for your first meal of the day is sure to put a smile on your face!
Prep Time 5 minutes
Cook Time 1 hour

Equipment

  • fridge

Ingredients
  

  • 2 tbsp chia seeds
  • 1 cup vegan Greek style yogurt
  • 1-2 tbsp maple syrup
  • 2 tsp blue spirulina powder
  • 1 cup coconut milk or plant milk of choice
  • granola of choice for topping
  • whipped topping optional

Instructions
 

  • In a bowl, add the chia, yogurt, maple syrup, blue spiruliba powder and coconut milk and whisk until thoroughly combined.
  • Let’s stand for 5 mins. Whisk again to remove any lumps, cover and refrigerate for at least 1 hour.
  • Once the chia is set, spoon into a serving jar or bowl and top with granola of choice and some delicious vegan whipped topping to serve.

Notes

This recipe is also amazing for meal prep. Simple double, triple, or even quadruple the ingredients for healthy breakfasts all week long.
