Banana Chocolate Protein Muffins

Who has a sweet tooth but wants healthy DELICIOUS alternatives!? These muffins are an absolute winner!! Using healthier options these muffs are vegan, gluten free and packed with plant based protein! Perfect pre workout snack and great options for kiddies. SAVE and try these beauts too!!

Ingredients
  

Ingredients

  • 1 cup mashed banana approx 2 large bananas
  • 1 flax egg mix 1 tbsp ground flax + 3 tbsp water
  • 4 tbsp maple syrup
  • 3 tbsp coconut oil
  • ¼ cup almond milk
  • ¾ cup oat flour
  • ½ cup plant based vanilla protein powder I used OWYN
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ¼ dark vegan dark chocolate chips

Instructions
 

  • Preheat the oven to 350 and prepare a lined or greased muffin tin.
  • In a bowl, mash bananas until smooth. Stir in flax egg, milk, maple syrup and coconut oil until combined
  • Add in oat flour, protein powder, baking powder, baking soda, cinnamon and ginger. Stir until combined. Fold in chocolate chips.
  • Pour batter into cups, filling ¾ of the way. Do not overfill!
  • Bake muffins for 15 minutes or until the tops are golden brown and a toothpick comes out clean when inserted in the center of the muffin.
