Pea and Edamame Pesto Pasta
Here it is you guys!!! Your one way ticket to fresh vibrant yumgasm town!! I demolished this whole bowl and it’s officially on my summer dinner rotation. I’m so proud of this one you guys! It packs some serious flavor punch and is so bright and fun! It's a winner for backyard get-togethers, a simple home dinner or picnic treat. Bursting with fresh pea flavor, umami, creamy texture and sweet pops of corn and edamame, this green goddess is a must try! Food should be fun! So let’s have it!!

Ingredients
- 8 oz penne pasta
- 1 cup corn kernels
- ¾ cup edamame shelled
Pea Pesto Ingredients
- ½ cup onion diced
- 4 cloves garlic rough chopped
- 3 tbsp olive oil
- 1½ cup peas frozen
- ½ cup edamame
- 1¼ cup water more as needed
- 1½ tbsp lemon juice
- ⅓ cup fresh parsley
- ¾ tsp salt
- ½ tsp pepper
- 1 tsp miso paste
- 3 tbsp hemp seeds
Cook your pasta per package directions and set aside.
Into a heated pan, add your olive oil, garlic and onion and sauté until fragrant and slightly brown.
Add your peas and edamame and heat through.
Remove from heat and add to your blender along with your water, parsley, salt, pepper, miso, hemp seeds, lemon juice and blend until smooth and creamy.
Return to the pan and add your pasta, corn and edamame. Warm through. Spoon into your bowls, garnish with extra parsley and Enjoy!!
