Get ready to transform your breakfast spread with my Homemade Mango Jam! This tropical delight is not only easy and cost-effective to make but also a healthier alternative to conventional jams. Made with just a few ingredients, including juicy mango chunks and natural sweeteners, this jam is bursting with fresh, fruity flavors.
In a saucepan. Add the 4 cups of frozen mango chunks. On a high heat stir the mangos until they start to breakdown.
Reduce the heat and using a masher, mash the mango down as it cooks until your desired consistency (I like large mango pieces for texture)
Once the mango has cooked down and reduced slightly. Add the lemon juice, chia seeds and maple syrup (if using) id advice tasting the mixture BEFORE adding maple syrup and adding as much or as little as you like**
Stir for a few minutes then remove the mixture from the heat and allow to cool in the pan ** the mixture will continue to thicken as it cools**
** I created this recipe with frozen mango. You can sub for fresh mango but you may need to add a little extra chia seeds as the texture of frozen isn’t the same as fresh.** I used white chia seeds for this recipe. Aesthetically it gives the jam a beautiful bright color. You can however use black chia seeds. They give the same consistency and nutritional content. Just be aware your jam will have a darker appearance.** I used lemon in this batch but I’ve also created this jam with fresh lime and this delicious!!!
