High Protein Chocolate Pudding

Equipment

  • blender or food processor

Ingredients
  

  • 2 medium avocados
  • 2 scoops vegan chocolate protein powder
  • 2 tbsp cacao powder
  • ½ tsp vanilla
  • pinch of salt
  • 1 can coconut milk
  • 1-2 tbsp maple syrup optional

Instructions
 

  • Simply combine all ingredients in a high-speed blender or food processor and blend until silky smooth and creamy.
  • Scoop into glass jars for serving and top with cacao nibs and fresh mint.

Notes

** aim to use soft but not too ripe of an avocado.
**I opted for a vegan protein powder. I like KOS and OWYN. They taste amazing, combine beautifully and are clean and additive-free. They are both available for a discount in my shop!
** the sweetener is completely optional. I find that the addition of a protein powder that’s sweet is not needed. But please add as much sweetener as you’d like to taste. I’d suggest blending without the sweetener. Testing it and adding sweetener to your liking :)
