Ingredients
  

Fritter Ingredients

  • 3 large chicken breasts finely diced
  • cup mayonnaise
  • 2 large eggs
  • cup all purpose flour
  • 1⅓ cups grated Parmesan cheese or mozzarella
  • ¼ cup fresh parsley chopped
  • 3 green onions chopped
  • ¼ tsp black pepper
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp sweet paprika
  • 2 tbsp coconut oil

Garlic Herb Aioli Ingtredients

  • cup mayonnaise
  • 1 garlic clove minced
  • ½ tbsp lemon juice
  • 2 tbsp fresh parsley or dill chopped
  • salt and pepper to taste

Instructions
 

  • Begin by finely dicing the chicken breasts and adding to a large mixing bowl.
  • Next, add all the remaining fritter ingredients and mix well. Cover with plastic wrap and refrigerate for at least 20 minutes.
  • Once the fritter mixture is ready. Heat a large non-stick pan over medium heat and add 2 tablespoons of coconut oil. When the oil is hot, add the mixture to the pan in a heaping tablespoon, pressing down to form a fritter shape.
  • Cook each side for 4-5 minutes, or until golden brown and fully cooked through.
  • Repeat until all the fritters are made, adding extra oil if needed.
  • Serve with garlic herb aioli and a squeeze of fresh lemon (optional)
  • Make your aioli by combining all ingredients into a small mixing bowl and stir until thoroughly combined.
