Grilled Corn Mango Salsa
Let’s make your new favorite snack!!! Grab you chips because we’re about to get our salsa on! Bright pops of char grilled corn, edamame crunch, fruity sweet mango, creamy avocado and zesty lime! This lil beaut is deliciously addictive and your new favorite summer snack. Bring to gatherings, serve as a quick snack or just eat it by the bowlful (guilty 😅) LETS SCOOP!!

- 3 ears of corn chargrilled (or air fried)
- 1 cup edamame shelled
- 1 ripe mango diced
- 1 avocado diced
- 2 tsp fresh lemon juice
- 1 tsp fresh lime juice
- salt and pepper to taste
- drizzle of olive oil
Husk your ears of corn, drizzle with a little olive oil and either grill or air fry until the corn is tender.
On a chopping board, carefully slice off the corn KERNALS and set aside
Then simply add all ingredients into a bowl and mix well to combine. Cover and refrigerate for and hr or so before serving. It gives the flavors time to marinate
Serve with tortilla or corn chips, add to a wrap or eat by the spoonful!! No wrong answers.
