Citrus Pomegranate Guacamole

If you're looking for an appetizer that everyone can enjoy, this Citrus Pomegranate Guacamole will be the most exciting dip to hit your table! Bright, citrusy, and bursting with juicy pomegranate arils, it's a total flavour bomb and twist on the classic. Perfect for your next snack board, Cinco de Mayo bash, or adding a colourful splash to a spring brunch!

Ingredients
  

  • 4 large Haas avocados ripe
  • 1 sumo citrus peeled, finely diced
  • 1 cup pomegranate arils divided
  • ½ cup cilantro chopped
  • ¼ large red onion finely chopped
  • 1 clove garlic minced
  • ½-1 tsp pink salt
  • pinch of black pepper
  • 1 tbsp sumo citrus juice
  • limes juiced
  • 1 jalapeño pepper seeds removed, finely diced

Instructions
 

  • Start by mashing the avocado with the lime juice, sumo citrus juice, salt and pepper with a masher or fork until you reach your desired consistency. (I like a few avo chunks!)
  • Next, add the diced sumo citrus (saving a few pieces for garnish) 3/4 cup of the pomegranate arils, jalapeño, cilantro, garlic, and onion and mix well.
  • Scoop the guacamole into a serving bowl and top with the remaining pomegranate arils, extra sumo citrus pieces and cilantro.
  • Serve with tortilla chips, crackers or veggies. ENJOY

Notes

I opted to use Sumo citrus in this recipe, as they were in season and the sweetness of a Sumo citrus is undeniably the best! If Sumo citrus is not in season, you could absolutely use mandarin or a sweet orange.
