Christmas Tree Chia Pudding

A base of protein and iron packed chia pudding that can be prepped to be served in advance, topped with the most fantastic. All natural fruit Christmas tree! The magic and whimsy of this time of year can be captured in our food, I can hopefully provide a little inspiration to create delicious, and nutritious breakfast that can bring a festive smile!

  • 8 tbsp chia seeds
  • 2 cups almond milk or plant milk of choice
  • 6 tbsp vegan Greek style yogurt
  • 4 tbsp maple syrup

Topping Ingredients

  • kiwi fruit
  • pomegranate seeds
  • cinnamon sticks
  • banana
  • coconut shredded

Instructions
 

  • First let’s prep our chia pudding. (This step is best done the night prior but you can also do it a few hours in advance of serving).
  • In a large bowl, combine all pudding ingredients and whisk until thoroughly combined. Let stand 5 mins and whisk again to remove any lumps. Cover and refrigerate for minimum one hour or if using for breakfast prep. Overnight :)
  • Once the chia pudding is set, peel and slice the kiwi fruit into small triangles.
  • Add your desired amount of the chia pudding mix to a bowl. And begin to layer your kiwi triangles into the shape of a tree. Start with one at the top. Then two beneath that. Then three and so on.
  • Once you have your kiwi tree. Top with a banana star (I used a vegetable cut out) a cinnamon stick for the trunk. Pomegranate seeds for the ornaments and finally some shredded coconut below to mimic snow! All natural and fun! Enjoy!
