Add around a tbs of mixture to mini cupcake silicone molds **adjust depending on the mold you choose
Press the mixture firmly into the molds **alternatively you can simply roll into balls and dip in the white chocolate mixture :)
In two bowls, halve the white chocolate. In one bowl add 1/2 tbs coconut oil, in the other add 1/2 tbs coconut oil and 1/2 tsp of pink pitaya powder.
Microwave them each at 30 second increments until completely melted.
Top half your protein bites with white chocolate and half with the pink. **if not using molds. Simply dip the balls in each of the chocolates :)
Top with sprinkles and refrigerate until the chocolate is set. Remove from the molds and party on!
