Birthday Cake Protein Bites

Soft, chewy, and packed with birthday cake flavor, these no-bake protein bites are loaded with colorful sprinkles and dipped in white chocolate. They’re the perfect little sweet treat when you want something delicious with a protein boost!

Equipment

  • mini cupcake silicone molds

Ingredients
  

  • 6 scoops birthday cake plant based protein powder OR vanilla plant based protein powder I used KOS
  • ½ cup cashew butter or nut butter of choice
  • ¾ cup coconut flour
  • ¼ cup gluten free oat flour
  • ½ cup warm flax milk or nut milk of choice
  • tbsp coconut oil melted
  • tbsp maple syrup
  • natural rainbow sprinkles
  • 10 oz dairy free white chocolate
  • ½ tsp pink pitaya powder
  • 1 tbsp coconut oil

Instructions
 

  • In a large bowl, simply add protein powder, oat flour, coconut flour, cashew butter, maple syrup, coconut oil and flax milk. Mix well to combine
  • Add around a tbs of mixture to mini cupcake silicone molds **adjust depending on the mold you choose
  • Press the mixture firmly into the molds **alternatively you can simply roll into balls and dip in the white chocolate mixture :)
  • In two bowls, halve the white chocolate. In one bowl add 1/2 tbs coconut oil, in the other add 1/2 tbs coconut oil and 1/2 tsp of pink pitaya powder.
  • Microwave them each at 30 second increments until completely melted.
  • Top half your protein bites with white chocolate and half with the pink. **if not using molds. Simply dip the balls in each of the chocolates :)
  • Top with sprinkles and refrigerate until the chocolate is set. Remove from the molds and party on!

Notes

**store the protein bites in the fridge and enjoy each day for a burst of plant powered energy!
