Vegan Sausage Kale and White Bean Soup

Like a big warm cuddle with every slurp! This heartwarming, hearty, flavorful soup comes together with simple wholesome ingredients, is completely plant based and full of nourishing, satisfying and cozy soup essentials. Using vegan sausage (which will welcome even non vegans to the party) this soup comes together effortlessly and is also a perfect fall meal prep. Heart warming, delicious and nutritious. Ingredients

  • 1 packet vegan sausages slices, I used Gardein
  • 1 large onion diced
  • 1 tsp Italian seasoning
  • ½ tsp black pepper ground
  • 4 cloves garlic crushed
  • 3 cups baby potatoes small dice
  • 6 cups vegetable stock or broth
  • 2 cups white beans drained and rinsed well
  • 3 cups kale roughly chopped
  • squeeze of fresh lemon

Instructions
 

  • Chop and prepare all ingredients ready to begin.
  • To a large soup pot add the sliced vegan sausage and sauté until browned.
  • Add the diced onion, Italian seasoning, and black pepper and sauté until the onion starts to brown.
  • Add the garlic and cook until fragrant.
  • Add the potato, and vegetable broth and allow to simmer (around 10 mins).
  • Add the navy beans and cook further until potatoes have softened.
  • Remove from the heat and stir through kale until it’s wilted slightly and add a squeeze of fresh lemon juice. Add any extra salt to taste then…
  • Spoon immediately into serving bowls and serve with crunchy toasted bread if desired. Enjoy!
