Thanksgiving Salad
So today I’m celebrating with my thanksgiving inspired salad!! I’m Forever grateful for salad! Hot/cold/sweet/savory salads are always a winner with me! So let’s all give thanks and shove this delishy fall salad in our gobs! big loves from the bottom of my lil aussie heart!!

Ingredients
- kale
- pomegranate
- brussel sprouts
- crispy chickpeas
- walnuts
- apple
Dressing Ingredients
- ½ cup vegan Mayo I used @primalkitchenfoods
- ¼ tsp garlic powder
- ¼ tsp onion powder
- fresh ground pepper
- salt to taste
- squeeze of lemon juice
For the crispy chickpeas, rinse, drain and rub (to remove the outer skin) of one can of chickpeas. Drizzle with olive oil, salt, pepper, smoked paprika and pepper and air fry until crispy and crunchy!! Remove and set aside.
For the brussels, simply halve, drizzle with olive oil, and salt and pepper and add to your air fryer. Fry for around 8 minutes. Shaking every few minutes. Until crispy and slightly charred. So simple and so yummy even just by themselves! Remove and set aside.
For the dressing. Simply add all ingredients into a bowl and whisk until well combined then set aside.
To assemble, add all your salad yummies to your bowl, drizzle that dressing all over and enjoy this sweet savory, warm and crispy salad!!
