- 8 tbsp chia seeds
- 2½ cups coconut milk
- 2 tbsp maple syrup
- 1 cup shredded coconut
Serving Ingredients
- ½ cup vegan Greek yogurt
- 1 cup fresh pineapple very finely chopped
- extra chopped fresh pineapple and pineapple leaves for garnish
In a large bowl, combine, chia seeds, shredded coconut, maple syrup and coconut milk
Whisk until very well combined, let it rest for 2 minutes then whisk again to remove any remaining lumps.
Add to an airtight container(s) (you can proportion if using for prep and keep refrigerated for at least 2 hours, overnight and whenever you want to eat your prep. When ready to serve, remove your prep from the fridge and layer chia pudding with chopped pineapple and vegan Greek yogurt. Add garnishes if desired.
