My Un-Beet-Eivable Quinoa Salad

  • measuring cup
  • mixing spoon
  • serving bowl

Ingredients
  

  • 4 cups cooked quinoa cooled
  • 1 cup shelled edamame
  • 1 cup beet slices cubed
  • ¼ of a red onion chopped finely
  • cup beet juice
  • 1 tbs beetroot powder
  • 1 clove garlic minced
  • 2 tbs olive oil
  • squeeze of lemon juice
  • salt and pepper to taste
  • avocado

Instructions
 

  • Cook quinoa according to package instructions. Set aside.
  • Once cool JUST add all ingredients into a bowl and mix!!!!
  • Spoon into a sharing bowl and serve with fresh avocado! BAMMMM this simple deliciousness is such a winner. ENJOY MY peeps!!!!
