My Un-Beet-Eivable Quinoa Salad

- 4 cups cooked quinoa cooled
- 1 cup shelled edamame
- 1 cup beet slices cubed
- ¼ of a red onion chopped finely
- ⅓ cup beet juice
- 1 tbs beetroot powder
- 1 clove garlic minced
- 2 tbs olive oil
- squeeze of lemon juice
- salt and pepper to taste
- avocado
Cook quinoa according to package instructions. Set aside.
Once cool JUST add all ingredients into a bowl and mix!!!!
Spoon into a sharing bowl and serve with fresh avocado! BAMMMM this simple deliciousness is such a winner. ENJOY MY peeps!!!!
