Kiwi Popsicles (with pineapple and coconut water)

Equipment

  • 1 blender
  • 1 Popsicle mold
  • popsicle sticks

Ingredients
  

  • 5 kiwi, peeled and cut into chunks (plus extra slices for layering)
  • Juice of 1 lime
  • 1/2 tsp Lime zest option, but add such a lovely brightness
  • 1 1/2 cups Pineapple juice
  • 1 cup Coconut water
  • 1 Tbsp Sweetener (honey, maple syrup, agave) Optional

Instructions
 

  • Start by adding kiwi chunks, pineapple juice, coconut water, lime juice, and lime zest into a high-speed blender, and Blend until completely smooth and vibrant. (Taste and add sweetener if you want a little extra sweetness)
  • Next, slice some extra kiwi and place a slice into each popsicle mold.
  • Then, pour the blended mixture over the top.
  • And finally, insert popsicle sticks, then freeze overnight (or at least 4-6hours until fully set).
