- 1/2 cup mascarpone cheese, softened
- 3 Tbsp almond milk
- 8 oz coconut whipped cream or Cool Whip, thawed
- 1/2 box funfetti cake mix approx 1 cup
- 2 Tbsp rainbow sprinkles, plus more for topping
- Animal crackers, for serving
Heat treat the cake mix: Add the funfetti cake mix to a microwave-safe bowl. Microwave in 30-second intervals, stirring between each interval, until the cake mix reaches 165°F. Allow it to cool completely before using.
In a medium bowl, combine the softened mascarpone cheese and almond milk. Mix until smooth and creamy.
Add the cooled heat-treated cake mix and stir until fully incorporated
Fold in the coconut whipped cream or Cool Whip until the mixture is light, fluffy, and evenly combined.
Gently fold in the rainbow sprinkles, reserving some for topping if desired.
Transfer the Dunkaroo Dip to a serving bowl, top with extra sprinkles, and serve with animal crackers.
