Asian Jackfruit Bowl
This Sweet Spicy Asian Jackfruit Bowl inspired jackfruit, cooling cucumber, sweet mango, pops of edamame and a cute lil avocado rose! What more could you want?!

Bowl Ingredients
- 1 can organic jackfruit drained
- 1 cup fresh mango diced
- ½ an avocado (for avocado rose)
- ½ cup fresh cilantro chopped
- 1 cup jasmine rice
- 1 cup edamame shelled
- ¾ cup cucumber sliced
Jackfruit Marinade Ingredients
- ⅓ cup soy sauce
- 1 tbsp tamari
- ¼ cup rice vinegar
- 2 tbsp coconut sugar
- 2 tbsp sesame oil
- 2 tsp garlic minced
- 1 tsp sambal oelek
- 1 tbsp ginger grated
Cook rice according to package directions
Chop veggies and put aside
FOR the jackfruit, combine all marinade ingredients into a bowl and whisk.
Once combined, drain and pull apart the jackfruit and add to the marinade. Add the jackfruit to a hot pan and saute till the marinade starts to caramelize slightly and remove from heat.
Assemble all ingredients into your bowl and drizzle with extra marinade if desired. Then get into itttt!!
